BRICK OVEN

We specialize in handcrafted sourdough loaves made with 100% organic flours and grains.  

After interning with the renowned oven-builder Alan Scott back in the 1990s, Charlie began building our oven in 2009.   The oven utilizes wood  heat stored in 15,000 pounds of masonry.  This “Alan Scott” oven is specially designed to provide radiant, even heat necessary for efficient baking.  The resulting loaves have crusty, crackly exteriors and moist, perfectly textured interiors. Traditionally, ovens of this sort have been used all over the world for professional and communal bread-baking but were not in wide use in the United States until Alan Scott pioneered their renaissance.  We fire our oven for two full days each week with surplus slab wood from a local saw mill.
